Lomo Saltado

Lomo Saltado
  • 2 lbs beef strip loin
  • 1 sliced red onion
  • 1 beef steak tomato
  • 1 ½ lb russet potato or pre cut french fries
  • 2 tbl Aji amarillo paste
  • 4 tbl soy sauce
  • 2 tbl white vinegar
  • 3 chopped garlic clove
  • 3 tbl chopped cilantro
  • Salt and pepper
  • 1cup long grain rice
  • The Farm Collection Cabernet Sauvignon


  • Cut potatoes into fries and put aside in water.
  • Cut tomatos in ½ inch wedges.
  • Cook rice.
  • Lightly season beef with salt and pepper.
  • Heat large saute pan to medium-high heat, and brown the beef and set aside in a bowl.
  • In same pan, add onion and cook until slightly tender.
  • Lower heat to medium and add tomatoes, aji paste and garlic. Cook for 2 minutes.
  • Add soy sauce and vinegar, stir, and turn off heat.
  • Add beef and cilantro to pot mix and set to the side.
  • Fry potatoes. 
  • Scoop rice on plate.
  • Put a handful of fries next to rice and then spoon beef on top of the fries.
  • Pair with a full glass of The Farm Collection Cabernet Sauvignon.
