Lomo Saltado

Instructions
- 2 lbs beef strip loin
- 1 sliced red onion
- 1 beef steak tomato
- 1 ½ lb russet potato or pre cut french fries
- 2 tbl Aji amarillo paste
- 4 tbl soy sauce
- 2 tbl white vinegar
- 3 chopped garlic clove
- 3 tbl chopped cilantro
- Salt and pepper
- 1cup long grain rice
- The Farm Collection Cabernet Sauvignon
Instructions
- Cut potatoes into fries and put aside in water.
- Cut tomatos in ½ inch wedges.
- Cook rice.
- Lightly season beef with salt and pepper.
- Heat large saute pan to medium-high heat, and brown the beef and set aside in a bowl.
- In same pan, add onion and cook until slightly tender.
- Lower heat to medium and add tomatoes, aji paste and garlic. Cook for 2 minutes.
- Add soy sauce and vinegar, stir, and turn off heat.
- Add beef and cilantro to pot mix and set to the side.
- Fry potatoes.
- Scoop rice on plate.
- Put a handful of fries next to rice and then spoon beef on top of the fries.
- Pair with a full glass of The Farm Collection Cabernet Sauvignon.
