At 7Cellars, we hold our winemaking process to the highest regard—just as John Elway has done his entire life, in his career, in business, and in charity. From harvest all the way to bottling, the standards we set for the 7Cellars brand and for the wines we produce reflects the man behind it.
Harvest begins with hand-picking the white grapes that are used to make Elway’s Reserve Carneros Chardonnay and ends with the same process for the red grapes used to make our Elway’s Reserve Napa Valley Cabernet Sauvignon. Before being lightly crushed, all our grapes are sorted and destemmed.
Once crushed, we press our white grapes, separate the skins, and transfer the pure white juice to tanks for settling and fermentation. Our red grapes, on the other hand, immediately begin the fermentation process—skins and all, which gives the wine its gorgeous crimson color.
After fermentation, we age our wines in barrels and bottles until John and our winemakers feel that each varietal has reached its full expression—guaranteeing unforgettable flavor that compliments every celebratory occasion.
